Before plant-based became a campus catchphrase, the dining team at the University of North Texas (UNT), Denton, just north of Dallas, pioneered an all-vegan dining hall, Mean Greens Café, one of the first in the country when it opened back in 2011. A new trailer-turned-farm is another step forward in the café’s veg-centric evolution.
