Yukon Gold & Sweet Potato Hash

YIELD: Half of 1 hotel pan

½ lb. butter, unsalted
1 lb. sweet onion, medium dice
½ lb. red bell pepper, medium dice
½ lb. green bell pepper, medium dice
2 lbs. sweet potato, cooked
2 lbs. Yukon Gold potato, cooked
1 Tbsp. garlic, minced
2 oz. bacon, cooked, rough chopped
1 Tbsp. thyme, chopped
1 Tbsp. chives, finely chopped
dash of cayenne, cumin and coriander
sea salt and black pepper, to taste

  1. Melt butter in large sauté pan or braising pan. Add onion and sauté until lightly browned. Add peppers and cook until softened. Add potatoes and cook until browned on all sides. Add garlic and sauté for 2 minutes. Add bacon, thyme, chives and spices and sauté another 2 minutes. Adjust seasonings and serve.
