This chicken delivers flavors of the Yucatan with spices and plenty of citrus.
8 chicken breasts
2 tbsp. ground cumin
2 tbsp. minced garlic
1.5 cups pineapple juice
1.5 cups orange juice
2 tbsp. dried oregano
1 tbsp. tabasco sauce
1.5 cups lime juice
16 fresh cilantro sprigs
Mix all ingredients except cilantro. Add chicken and let marinate overnight.
Lightly oil flat top grill and cook until chicken reaches internal temperature of 165°F.
Garnish with fresh cilantro. Serve with your favorite tropical vegetable and grain.
