Making masala doesn't have to be hard. This recipe uses a handful of ingredients and spices to make a flavorful side dish.

Ingredients

1 lb. yard beans (or green beans), cut into 2-3 in. pieces
Salt
1 tbsp. vegetable oil
1 large onion, halved lengthwise and thinly sliced
1/2 tsp. cinnamon
3/4 tsp. cayenne
2 large tomatoes, halved and thinly sliced
1 tbsp. chopped cilantro

Steps

  1. Fill pot with salted water, bring to boil. Cook yard beans until tender, about 4 minutes. Drain.

  2. In sauté pan over medium-high heat, warm oil. Sauté onions until browned, about 10 minutes. Stir in cinnamon, cayenne and pinch of salt. Sauté for a minute to release flavors of spices, then stir in tomatoes. Cook until the pan is nearly dry. Add yard beans and sauté for few minutes until evenly coated in Marsala.
