The no. 1 vegetarian dish at Syracuse University, these patties feature white kidney beans, onions, bread crumbs and garlic.

Ingredients

6 lbs. white kidney beans, drained
12 oz. frozen onions, diced
2.4380 lbs. (about 5 cups) bread crumbs
0.0833 lbs. (about 8 tsp.) granulated garlic
0.0940 lbs. (about 9 tsp.) fresh parsley, finely chopped
0.0156 lbs. (about 1½ tsp.) salt
0.0052 lbs. (about ½ tsp.) black pepper
0.0938 qt. (about 3 oz.) low sodium soy sauce
0.0469 qt. (about 1.5 oz.) olive oil
12 oz. ¼-in. diced green peppers

Steps

1. Mash all ingredients. Measure out 5 oz. of product and form into a hamburger shape.

2. In a heavy bottom skillet or griddle, brown both sides of bean cakes and then transfer to a sheet pan.

3. Place in a 350°F oven and bake for about 10 minutes.
