A parmesan, walnut, parsley pesto tops wax greens perfectly cooked, and makes a nice vegetable dish.

Ingredients

1 1⁄2 lb. wax beans
3⁄4 cup olive oil
1 garlic clove
3 tbsp. walnuts
1⁄3 cup Parmesan cheese
Salt and pepper
1 bunch fresh parsley
 

Steps

1. Boil beans and shock in cold water. Set aside.

2. Place all ingredients except the parsley in a blender and mix until smooth.

3. Add the parsley a little at a time, blending until fully incorporated.

4. In a large bowl, toss beans with pesto.
