YIELD: 1 qt.
½ cup watermelon puree
1/3 cup Vidalia onion, minced
3 cloves garlic, minced
1 cup ketchup
½ cup balsamic vinegar
½ cup honey
2 Tbsps. molasses
½ cup mirin rice wine
2 Tbsps. prepared teriyaki sauce
2 Tbsps. brown sugar
½ tsp. chipotle pepper
1 pinch ground allspice
1 pinch cinnamon
1 pinch ground ginger
1 Tbsp. liquid smoke
1. Add watermelon puree, minced onions and garlic into a pot; bring to a simmer.
2. Simmer 20 minutes, until sauce reduces to 2 cups. Add remaining ingredients and return to a simmer for 15 minutes more. Store in a clean jar and refrigerate.
