Victor’s Café is New York City’s oldest Cuban restaurant, celebrating its 50th anniversary this year. Current owner Sonia Zaldivar (Victor's daughter) has embraced the Nuevo Latino trend —revising many of her father's recipes to make them lighter and healthier —while maintaining their authenticity. The restaurant’s Signature Mojito stays true to the classic as well—although there is now a mango version.

Ingredients

Fresh lime slices
Fresh mint leaves
2 oz. Bacardi rum
½ oz. simple syrup
Crushed ice
Sugar cane stalk

Steps

1.        In shaker glass, muddle lime and mint leaves.

2.        Add rum and simple syrup; shake with ice. Pour into glass and garnish with sugar cane and a mint leaf.
