At The Press in Oklahoma City, pulled oats stand in for ground beef to make a vegan version of all-American sloppy joes. The plant-based product is composed of five simple ingredients: Nordic oats, fava beans, pea protein, oil and salt. The pulled oats have a meaty texture and readily absorb the spices and flavors in the recipe.

Ingredients

1 bag (2 lb.) frozen pulled oats, thawed

4 cups water

3 cups barbecue sauce

1½ cups ketchup

¼ cup vegetable broth

4 tbsp. canned chipotle in adobo

3 tbsp. dark chili powder

8 rolls or buns

Shoestring fried onions and pickles, optional

Fried okra, optional

Steps

1. In large skillet over medium heat, saute thawed oats 5 to 6 minutes until lightly toasted but still soft, stirring often.

2. In large saucepan, combine toasted oats, water, barbecue sauce, ketchup, broth, chipotle in adobo and chili powder. Bring to a boil over medium heat.

3. Reduce heat to medium-low; cover and cook 10 minutes to blend flavors and heat through.

4. To serve, spoon onto buns and top with fried onions and pickles. Accompany with fried okra.
