Ingredients

8 cups flour
4 tbsp. yeast
1 cup sugar
1 cup vegan margarine
3 cups coconut milk
1 tsp. salt

Caramel Sauce

4 cups brown sugar
2 cups coconut milk
2 cups shredded coconut (optional)
 

Steps

  1. Prepare caramel sauce: Heat brown sugar in large saucepan over medium-high heat until melted. Slowly add coconut milk. Stir until smooth. Pour into bottom of oven-safe hotel pan. Set aside.

  2. Place dough ingredients in mixer. Mix for 10 minutes.

  3. Roll out dough into 1/2 inch thick rectangle. Brush with 1/4 cup water.

  4. Sprinkle mixture of 1 cup sugar and 1 tablespoon cinnamon over dough.

  5. Roll on long end into log. Slice into 12 evenly sized rolls.

  6. Place rolls flat side down in pan on top of caramel. Cover, set on counter, allow dough to proof for 20 minutes.

  7. Bake at 325°F for 25 minutes.

  8. Remove from oven, cool in pan for 5-10 minutes. Turn out entire pan onto serving dish or platter. Serve.
