Vegan Bacon Guacamole Burger

Vegan burgers are a necessity to counteract the veto vote at a steakhouse. But they're also a menu mainstay at most burger concepts and college dining operations. Start with any plant-based burger to build this California-inspired recipe. At BOA Steakhouse, chef Peterson tops hers with fresh housemade guacamole and vegan bacon bits.
 

Ingredients

Fresh avocado guacamole
6 ripe avocados, peeled and pitted
3 tbsp. lime juice
2¼ cups finely chopped red onion
1½ cups seeded and chopped Roma tomatoes
¾ cup finely chopped cilantro
Salt and black pepper, taste

Burgers
12 vegan burger patties, cooked to order
12 vegan potato buns, toasted
6 cups fresh avocado guacamole
6 oz. vegan bacon bits, hickory style
9 oz. butter lettuce
10 oz. white onion, thinly sliced
12 oz. vegan mayonnaise
 

Steps

1. Prepare guacamole: In large bowl, combine avocados, lime juice, tomatoes, red onion, cilantro and salt and pepper to taste. Mix together ingredients until slightly chunky.
2. Per serving, spread 1 ounce vegan mayonnaise on bottom bun. Top with a grilled vegan burger patty, 1/2 cup guacamole, ½ ounce vegan bacon bits, ¾ ounce butter lettuce and ¾ ounce sliced onion. Top with other bun half.
