YIELD: 4 servings

1 small cucumber
½ cup plain Greek yogurt
2 Tbsps. chopped fresh mint
½ garlic clove, minced
1 Tbsp. lemon juice
salt and pepper, to taste
pinch of sugar
1 shallot, finely chopped
olive oil, as needed
1 ¼ lbs. ground lamb
4 buns
4 tomato slices

1.    Grate cucumber on large-hole side of box grater; place in medium bowl. Add yogurt, mint, garlic, lemon juice, pepper and sugar; set aside.
2.    In separate bowl, mix lamb, shallot, salt and pepper. Divide into 4 patties. In skillet, grill pan or grill, cook patties in oil until browned on both sides and pink in the middle, about 8 minutes.
3.    Place burger on toasted bun; top with tomato and tzatziki.
