Traditional Yogurt Raita

Raita is a common sauce for several classic Indian dishes such as biryani. This version uses cumin, cayenne, cucumber, tomato, red onion and cilantro.

Ingredients

1 cup plain yogurt, Greek or Indian-style preferred
1⁄4 tsp. kosher salt
1⁄4 tsp. toasted cumin powder
1⁄3 tsp. cayenne (optional)
1⁄2 cucumber, peeled, seeded, diced
1 plum tomato, seeded, diced
1⁄4 red onion, peeled, diced
1 tbsp. cilantro leaves, chiffonade 

Steps

1. In quart-sized bowl, mix yogurt, salt, cumin and cayenne until smooth. Stir in cucumber, tomato, onion and cilantro.

2. Garnish with extra pinch of toasted cumin or chiffonade of cilantro leaves. Serve cold with flatbreads or crackers.
