Noodles symbolize long life and are considered to be a lucky dish to add to the Lunar New Year table. Here, chef Peizer adapts American ingredients to an Asian prep, tossing whole-grain spaghetti with a spicy Thai chili-garlic sauce. Vegetables and walnuts add crunchy contrast and cooked chicken amps up the protein.

Ingredients

Vegetable oil for cooking
1 cup diced chicken breast
4 cups cooked whole grain spaghetti, drained
1 cup sliced green onions
1 cup diced bell peppers
1 cup walnuts, coarsely chopped
¼ cup + 2 tbsp. lemon juice
3 tbsp. low-sodium soy sauce
1 tbsp. Thai chili & garlic sauce
2 tbsp. chopped cilantro

Steps

1. Heat oil in large nonstick skillet over medium-high heat. Add diced chicken and cook, stirring frequently, for 3 to 4 minutes.
2. In large bowl, combine chicken, spaghetti, green onions, bell peppers and walnuts.
3. In small bowl, whisk together lemon juice, soy sauce and chili sauce. Toss sauce mixture with noodles to mix well.
4. To serve, sprinkle noodles with cilantro leaves.
