This yummy tuna taco is prepared with lime juice and cilantro for zip. Papaya salsa adds just the right touch of sweetness to these tacos served on warm tortillas.

Ingredients

1 large ripe papaya, peeled, seeded and diced
1 small red onion, diced
1 tbsp. dijon mustard
1 tbsp. lime juice
1 sprig rosemary, finely diced
1 lb. yellowfin tuna, diced
1 cup lime juice
1 tbsp. oil
4 plum tomatoes, julienned
1 small red onion, diced
1 tbsp. cilantro, chopped
8 flour tortillas
 

Steps

1. In a bowl, mix together first 5 ingredients. Cover and refrigerate 30 min. Reserve.

2. In a separate bowl, marinate tuna in lime juice for 15 min. Drain liquid; reserve.

3. In a skillet, heat oil and sauté tuna briefly. Add tomatoes and onion; stir, season. Add reserved lime juice and cilantro and cook until done (it will cook quickly).

4. Serve tuna over warm tortillas topped with papaya salsa.
