The fragrance and flavor of sage comes through in these delicate gnocchi made with sweet potatoes. A simple brown butter sauce would make a delectable topping.

Ingredients

1 medium sweet potato, peeled
2 Yukon Gold potatoes, peeled
1 tsp. sage leaves, chopped
1⁄4 tsp. cayenne
1⁄4 tsp. each allspice and nutmeg
Salt and pepper, to taste
1⁄2 cup flour
1⁄4 cup semolina
1 large egg, beaten
 

Steps

  1. Boil potatoes until just done. Drain and let dry for 5 min. Press potatoes through food mill and place in 325°F. oven for 7 min. Cool.

  2. Create a well with the potatoes and add seasonings and half the flour and semolina. Work the egg into the potato mixture, and add the remaining flour and semolina, until just combined. Chill for 30 min., roll cut into pieces, and boil.
