A tender and light biscuit enhanced by the natural sweetness of the potato. Serve these warm with some honey-butter on the side for a delicious treat.

Ingredients

2 cups all-purpose flour
4 tsp. baking powder
1⁄2 tsp. ground nutmeg
1⁄2 tsp. salt
6 tbsp. butter
1⁄2 cup well-mashed sweet potatoes
1⁄3-1⁄2 cup milk
 

Steps

  1. Preheat oven to 425°F. Grease a baking sheet.

  2. Combine flour, baking powder, nutmeg, and salt in a bowl. Cut in butter until coarse crumbs form.

  3. Mix sweet potatoes with 1⁄3 cup milk. Add to flour mixture and stir until dough holds together, adding more milk if necessary.

  4. Knead dough for 1 min. on floured surface; roll out 1⁄2 in. thick and cut into 2-in. rounds. Roll trimmings to make more biscuits. Bake 10-15 min. until golden.
