Prepared pizza crusts make this easy to serve. Shredded turkey and sweet barbecue sauce top the pizza and a sprinkle of cheese, peppers and onion are all it needs before being popped into the oven.

Ingredients

4 1/2 lbs. cooked turkey, shredded
1 quart sweet barbecue sauce
3/4 cup olive oil
36, 6-inch prepared baked cheese pizza crusts
2 1/4 cups sweet onion, chopped
2 1/4 cups green bell pepper, seeded and chopped
3 lbs. mozzarella cheese, shredded
Cornmeal as needed
2 cups Parmesan cheese, grated

Steps

1. Toss shredded turkey with barbecue sauce. Cover, refrigerate and hold for service.

2. For each individual pizza crust, brush 1 teaspoon olive oil atop crust. Cover with 2 ounces turkey mixture. Top with 1 teaspoon each chopped onion and pepper. Sprinkle with 1-ounce Mozzarella.

3. Bake in a preheated 450-degree F oven for 6-8 minutes on hot cornmeal-dusted stone/pan. Cook until cheese melts and crust is crisp and golden. Remove from oven and sprinkle with Parmesan cheese.
