Chicken, sweet potatoes and pears come together perfectly in this scrumptious hash. Savory and satisfying with just a hint of sweetness, this dish is perfectly topped with a dollop of sour cream.

Ingredients

11 lb. chicken or turkey, cooked, coarsely chopped or ground
4 1/4 lb. sweet potatoes, slightly undercooked, coarsely chopped or ground
4 1/4 lb. diced Pacific Northwest Canned Pears, drained
3 cups green onion, thinly sliced
1/4 cup fresh chopped dill or parsley
1/3 cup salt
2 cups chicken stock
12 oz. butter, melted
Sour cream, as needed
Dill or parsley sprigs, as needed

Steps

1. Mix poultry and remaining ingredients, except sour cream and dill sprigs; evenly divide between 2 pans. Bake at 350° F for 1 1/2 hr. or until lightly browned.

2. Per order, using a #6 scoop, put 6 oz. of hash on a serving plate. Garnish with a dollop of sour cream and a sprig of dill or parsley.
