Mixologist Haasarud created a honey simple syrup that serves as the base for a variety of mocktails and low-alcohol cocktails. The Sunny Spot takes advantage of vitamin-packed carrot juice to give this refreshing drink a healthy twist. Spike the mocktail with an ounce of vodka and it effortlessly turns into a cocktail. 
 

Ingredients

Honey syrup
2 cups orange blossom honey
1 cup hot water

Mocktail
1 oz. orange blossom honey syrup
4 oz. carrot juice
¾ oz. lemon juice
Tarragon sprig, for garnish
 

Steps

1. For honey syrup, combine honey and hot water. Stir well until dissolved. Pour into a bottle or container; cover and refrigerate until ready to use.
2. For mocktail, combine honey syrup, carrot juice and lemon juice in cocktail shaker; shake and roll contents.
3. Pour mixture into a tall glass. Garnish with a tarragon sprig.
