These pockets filled with rotisserie chicken, oranges, peas and lettuce bring a fun spin to a traditional pita pocket.

Ingredients

8 oz. rotisserie chicken, cut into cubes
2 Florida oranges, sectioned, chopped
1/2 cup frozen petite peas, thawed
1/3 cup regular or light mayonnaise
1 tbsp. 100% Florida orange juice
1/2 tsp. Florida orange zest, finely grated
3 pocket pitas, cut in half crosswise
Bibb lettuce leaves (optional)

Steps

1. In large bowl, combine chicken, orange sections and peas.

2. In small bowl, combine mayonnaise, orange juice and orange zest. Add to chicken mixture; stir to coat.

3. Gently open pockets of each pita half. Spoon chicken mixture evenly into each pocket. Add lettuce, if desired, and serve.
