Mac and cheese is a comforting pasta dish with wide appeal. The kitchen at Yak & Yeti gives the classic preparation a spicy kick by incorporating Sriracha into the cheese sauce. The addition of shrimp and scallops turns what is often served as a side into a well-balanced entree.

Ingredients

Sriracha cheese sauce
1 cup unsalted butter
1 cup all-purpose flour
1 tbsp. kosher salt
1½ qt. whole milk, scalded
24 oz. Havarti cheese, shredded
2½ cups sliced green onions
½ cup Sriracha
3 tbsp. grated ginger

Mac and cheese
1½ cups canola oil
½ cup minced garlic
10 oz. small shrimp, peeled and deveined
10 oz. small scallops
1 gal. Sriracha cheese sauce
2 lb. grated Parmesan cheese, divided
3 lb. elbow macaroni, cooked al dente
2 cups toasted panko bread crumbs

Steps

  1. For Sriracha cheese sauce: In large saucepan or stockpot over medium heat, melt 1 cup butter. Whisk in flour; cook 3 minutes, whisking constantly, until light golden brown. Remove from heat.

  2. Slowly whisk in salt and scalded milk, 1 cup at a time, until blended. Return pot to medium heat; whisk constantly until mixture is smooth and thickened.

  3. Stir in cheese; mix slowly until melted and smooth. Stir in green onions, Sriracha and ginger; remove from heat.

  4. In large rondeau or saute pan over medium heat, heat oil. Add garlic; saute 3 minutes. Add seafood and prepared cheese sauce; cook 5 to 7 minutes until mixture is heated through, stirring constantly.

  5. Blanch macaroni in boiling water 30 to 45 seconds until heated through. Immediately transfer to pot with cheese sauce mixture; coat well with sauce. Add 1½ cups grated Parmesan; toss to coat.

  6. Portion mixture into warm bowls; evenly top with remaining Parmesan and panko. Drizzle with Sriracha; garnish with cilantro.
