The Burrowing Owl, a casual vegan spot, uses this meatless mix in tacos, salads and burritos. Textured soy protein stands in for ground beef or turkey and vegan cheese tops the burrito.  

Ingredients

1 1/2 cups hot water
1 cup textured soy protein
1/2 tbsp. lime juice
1/2 tsp. oregano
1/2 tsp. paprika
1/2 tsp. sugar
1/2 tsp. chili powder
1/2 tsp. cayenne
1/2 tsp. ground cumin
1/2 tsp. vegetarian bouillon granules
1/2 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. onion powder

Steps

  1. In large saucepan, stir together water and soy protein. Add remaining ingredients; bring to a boil over medium heat.

  2. Cook 30 minutes to blend flavors. The dehydrated soy protein will absorb the water and seasonings as it cooks.
