Spicy Orange Noodles

YIELD: about 30 (5 oz.) servings

3 lbs. cooked noodles (spaghetti, lo mein, etc.)
16.5 oz. dry mix package Mandarin orange sauce
1/2 gallon hot water
4 oz. hot chili paste
3 bunches finely chopped scallions
2 Tbsps. red pepper flakes
120 whole Chinese dried red chile peppers

1. Cook noodles to al dente according to package directions. While noodles are cooking, pour ½ gallon hot water and chile paste into mixing container. Pour orange sauce into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and sauce is smooth.

2. Place cooked noodles in full steam table pan. Pour sauce over noodles. Sprinkle with chopped scallions, red pepper flakes and dried chile peppers. Toss to evenly coat. Keep warm (160°F). Serve in Chinese takeout container.
