Juicy watermelon tastes like summer, and this cocktail shows it off in all its glory. The restaurant Spruce Peak in Vermont combines watermelon puree, lemon juice and simple syrup with smoky mezcal, rimming the glass with chili pepper salt for a kick of spice. Watermelon slices garnish the drink, along with mint.

Ingredients

1½ oz. mezcal

1 oz. watermelon puree

½ oz. simple syrup

½ oz. fresh lemon juice

Chili pepper salt

3 to 4 pieces sliced watermelon, for garnish

Mint leaves, for garnish

 

Steps

1. In cocktail shaker with ice, mix mezcal, watermelon puree, syrup and lemon juice; shake to combine.

2. Rim glass and sprinkle watermelon slices with chili pepper salt. Add ice cubes to glass; strain mezcal mixture over ice. Garnish with fresh watermelon and mint.
