FPI's FireRoasters™ Southwest Style Cod fillets are perfectly flame seared and can be baked, flat-grilled or microwaved. Basted with a blend of Southwest spices, these fillets make for an unforgettable seafood experience from High Liner Foods!

Ingredients

4 FireRoasters™ Southwest Style Cod, cooked 2 tsp. chili powder
2 vine tomatoes, seeded and diced 2 tsp. hot pepper sauce
1 red onion, sliced 1/4 tsp. cumin
1 clove garlic, minced (8) 6-inch soft taco shells
1 avocado, pitted, peeled and diced 8 leaves Boston lettuce
3 tbsp. chopped coriander
1 tbsp. lime juice
salt and pepper, to taste
1 cup sour cream

Steps

In a large bowl, combine tomatoes, onion, garlic, avocado, coriander and lime juice. Season with salt and pepper and gently toss. In another small bowl, combine sour cream, chili powder, hot pepper sauce and cumin. Cut fish fillets in half. Layer each taco shell with lettuce, top with half portion of cooked Cod fillet, avocado mixture and dollop with spicy cream.
