Mixologist Jose Romero created a mocktail with a healthy spin. The Sober Rabbit is made with antioxidant-rich carrot juice, rounded out with non-alcoholic ginger beer and simple syrup. He recommends that the carrots be juiced fresh.

Ingredients

4 oz. carrot juice

1 oz. ginger beer

¾ oz. simple syrup (equal parts water and sugar)

Ice cubes or crushed ice

Carrot slices, marigolds and cilantro, for garnish

Steps

1. For each drink, combine carrot juice, ginger beer and syrup in a cocktail shaker. Shake to blend.

2. Add ice and shake again. Strain into a tall glass and add ice, if desired. Garnish with carrots, marigolds and cilantro.
