YIELD: 12 servings

2 lbs. nonfat plain yogurt
1/3 cup dry ranch dressing mix
1 ½ cups chicken, fully cooked, cooled, diced
¼ cup prepared barbecue sauce
48 celery sticks
48 carrot sticks
¾ cup shredded cheddar cheese
¾ cup smoked almonds, rough chop
1 ½ cups Cheddar Snack Mix

1.    Place yogurt and dressing seasoning mix in mixing bowl.
2.    Mix with wire whisk until well combined. Set aside under refrigeration.
3.    For chicken: Place chicken and barbecue sauce in separate bowl; toss to coat chicken. Set aside under refrigeration.
4.    To assemble: place #30 scoop of yogurt mixture into each of 12 (8 oz.) parfait cups. Place 4 each carrot and celery sticks around perimeter of cup, into yogurt, so they stand up. Place 2 Tbsp. chicken mixture on top of yogurt. Place 1 Tbsp. cheese on top of chicken. Place 1 Tbsp. almonds on top of cheese. Place #30 scoop of yogurt mixture on top of almonds. Top each parfait with 2 Tbsps. snack mix. Serve immediately or hold under refrigeration until ready to serve.
