Smoked Lemon Pepper Chicken

1 (2 ½ to 3 lb.) roasting chicken
4 tsps. lemon pepper blend
1 Tbsp. olive oil
½ cup fruit wood chips

1. Clean chicken, removing anything inside. Brush all sides of the chicken with oil. Place chicken in shallow baking dish and sprinkle 4 tsps. lemon pepper over the chicken.

2. Cook in a smoker or grill rotisserie. If smoking, prepare smoker with fruit wood chips and add chicken when coals are 80 percent white, and cook for 2 ½ hours. If grilling, preheat grill with fruit wood chips, place chicken on rotisserie rod and cook on grill for 2 hours.
