Chef/manager Anthony Kveragas offers Zhou, a rice-based Chinese porridge with ginger, a protein (shrimp, chicken, tofu or pork) and pickled vegetables.

Ingredients

2 ½ qt. water
2 oz. jasmine rice
2 tbsp. + 1 ½ tsp. ginger root cut in large chunks
1 ¼ oz. chicken soup base
6 oz. shrimp
⅛ tsp. ground white pepper
Salt to taste
2 ⅝ tsp. green onion 

Steps

  1. Add rice to water and boil with lots of whole chunks of ginger. (No need to peel ginger, just wash well and slice into ¼-in. slices.) Add chicken base and simmer for at least 1 hour.

  2. Add shrimp and simmer for 15 minutes to 140°F. Season with white pepper and touch of salt. Garnish with sliced green onions.
