A simple pilaf is made better by the addition of barley. The barley adds texture and so do the mushrooms. A sprinkle of parsley is all that is needed to finish the dish.
1⁄2 cup miso-ginger vinaigrette
1 cup hulled barley
3 tbsp. oil
1⁄2 lb. shiitake mushrooms, sliced
Parsley, for garnish
In a large pot, cook the barley for 30 min. or until tender. Drain completely and transfer to a bowl.
In a large pan, heat oil and sauté shiitakes.
Combine ingredients and sprinkle with chopped parsley.
