Orange and ginger infused Potato Pearls® Mashed Potatoes with sesame chicken and green beans.

Ingredients

1 pkg Potato Pearls® EXCEL® Original Recipe Mashed Potatoes
4 ¾ lb Chicken thigh boneless/skinless, cooked
2 Tbsp Orange zest, grated
2 Tbsp Canola oil
4 Tbsp Ginger, fresh (or 2 Tbsp ground ginger)
2 ½ lg Green beans, fresh/frozen, cooked
1 gal Hot Water (170°-190°F)
2 oz Toasted sesame seeds
19 ea Parsley sprigs (optional garnish)

Steps

  1. Add Potato Pearls® EXCEL® Original Recipe Mashed Potatoes, orange and ginger to a 4-inch deep, half-steamtable pan. Quickly add hot water, stir completely, making sure to hit all four corners. Set aside.

  2. Cut cooked chicken thighs in half and sprinkle with sesame seeds.

  3. Bowl Assembly: In an individual serving bowl place 1 cup orange and ginger Potato Pearls® Mashed Potatoes, top with green beans, then sesame chicken. Garnish with parsley.
