Savory Waffles with Whipped Cheese and Berries

Waffles made from scratch are more of a weekend treat when there’s a little more time for breakfast, but this savory version is filling enough for a light supper as well. Chef Michael Slavin says the cheese in the batter creates a little extra crust and crunch when the waffle hits the hot iron. Top the waffles with garlic and herb cheese whipped with maple syrup and berries.
Ingredients
Waffles
3 cups milk
2½ oz. butter
1 package (5.25 oz.) garlic and fine herbs cheese, softened
4 cups all-purpose flour
4 eggs
¼ cup + 2 tbsp. maple syrup
2 tsp. vanilla extract
1½ tsp. kosher salt
Nonstick cooking spray
Topping
24 oz. garlic and fine herbs cheese, whipped
Bourbon-maple syrup, warmed
Mixed seasonal berries
Steps
1. In medium saucepan, combine milk and butter. Place over medium heat and simmer until mixture reaches 120 F. Remove pan from heat and pour mixture into large bowl; whisk in softened cheese. Let cool slightly.
2. Whisk flour, eggs, syrup, vanilla and salt into warm mixture in bowl until well blended. Cover and refrigerate batter overnight.
3. Preheat waffle iron. For each waffle, lightly spray waffle iron. Ladle 5 ounces batter onto hot iron; close and invert. Cook 3 minutes or until waffle is golden brown. Repeat with remaining batter.
4. For topping, whip garlic and herb cheese with maple syrup to taste. To serve, quarter waffle and top with whipped cheese and berries.
