This salsa is simple to make and has a perfect balance of flavors.

Ingredients

1 lb. habañero chilis, fresh, stems removed
½ lb. guajillo chilis
1 lb. ancho chilis
½ lb. chili de arbol, dried
4 medium tomatoes
1 cup peeled garlic cloves
1 quartered onion
2 tbsp. ground cumin
¼ cup lemon juice
Salt to taste

Steps

  1. Place first seven ingredients in 400°F oven to roast, until onion is softened and chilis are well toasted (browned and crispy, not burnt). 

  2. Remove chili stems and steep in hot water, until soft. 

  3. Blend all ingredients with enough steeping water to create smooth consistency. Adjust salt to taste. 

  4. Pour over favorite sandwich or burrito.
