1 cup lime juice
Zest from limes
1 tbsp. sea salt
1 jalapeño, seeded, minced
1 red onion, finely diced
1 cup cantaloupe, diced
1 cup honeydew, diced
1⁄4 cup cilantro, chopped
1 lb. salmon steak, 1 in. thick, diced
Cilantro, if desired, for garnish
