Roasted Squash and Cauliflower

One of the best ways to cook butternut squash is by roasting it. Add cauliflower to round out this nutrient-packed side.

Ingredients

3 2/3 obst + 1/2 tsp. olive oil
2 3/4 tsp. balsamic vinegar
1/2 cup chopped fresh basil
1/4 tsp. kosher salt
Black Pepper to taste
1 lb. 3 oz. cubed butternut squash
1 lb. 3 oz. trimmed cauliflower

Steps

1. Combine oil, vinegar, salt and pepper. Mix well.
2. Portion squash and cauliflower onto 2 separate, parchment-lined sheet trays.
3. Drizzle oil and vinegar mixture over vegetables; toss gently to coat.
4. Roast vegetables at 350°F – Cauliflower 15 to 20 minutes, squash 20 to 25 minutes.
5. Toss hot vegetables with fresh basil.
6. Serve warm or at room temperature.
