Roasted beets are glazed with a zingy citrus sauce. Cloves add a hint of intriguing flavor to the tender beets.

Ingredients

4 bunches red beets, trimmed
1⁄4 cup olive oil
2 oz. butter
1 lemon, zested and juiced
1 lime, zested and juiced
2 oranges, zested and juiced
1 tsp. cloves, ground
 

Steps

1. Coat beets with olive oil. Spread beets on a sheet pan and roast in a hot 350° F. oven approx. 45 min. until tender. Remove from oven; cool.

2. With a small knife, peel away the outside skin and cut beets in quarters or eighths, depending on size of beet.

3. In a large skillet, sauté beets in butter. Add citrus zest, juice and cloves. Simmer 3-4 min., until heated through. Season to taste and serve.
