This classic hot chocolate recipe is enriched with dark chocolate ganache.

Ingredients

3 cups unsweetened cocoa powder
6 cups dark brown sugar
2 tsp. salt
3 cups boiling water
2 1/2 gal. milk
2 tbsp. pure vanilla
8 cinnamon sticks
32 oz. dark chocolate ganache

Steps

  1. Combine first three ingredients in 3-gallon stock pot; add boiling water and whisk.

  2. Bring mixture to boil while whisking; reduce heat and add milk, vanilla and cinnamon sticks; heat until very hot but not boiling. Let stand for 5 min.

  3. Remove cinnamon sticks; add ganache and whisk until creamy.

  4. Serve with your favorite condiments (examples: dark cherry syrup, amaretto syrup, coconut whip cream and espresso powder).
