These salmon steaks are full of spicy goodness. Fresh roasted corn salsa is a great accompaniament to the full-flavored fish.

Ingredients

1 cup orange juice
1⁄2 cup lime juice
1⁄4 cup olive oil
4 garlic cloves, crushed
6 serrano chiles, seeded and minced
4 tsp. lime zest
8 6-oz. salmon steaks

7-8 ears of corn, roasted and cut off cob
3 1⁄2 cups black beans, cooked
4 Roma tomatoes, diced
2⁄3 cup green onions, thinly sliced
2⁄3 cup cilantro, chopped
1 tsp. chili powder
2⁄3 cup reserved marinade
 

Steps

1. In a bowl, whisk together orange and lime juice, oil, garlic, 1⁄3 of the chopped chiles, lime zest, and season. Reserve 2⁄3 cup. Place salmon steaks in remainder and marinate 1-4 hrs.

2. In a large bowl, combine corn, beans, tomatoes, green onions, cilantro, remaining chiles, chili powder, and reserved marinade. Season to taste, and let stand 30 min.

3. Remove salmon from marinade and grill, approx. 4 min. per side.

4. Serve salmon on a bed of roasted corn salsa.
