Serve these simple potato pancakes on their own or as a side dish.
6 potatoes
2 onions
2 to 3 eggs
Matzo meal as needed
Grate potatoes and onions together and mix in eggs. Mix in matzo meal little by little until mixture isn’t too watery.
Carefully drop large spoonfuls onto greased heated frying pan.
Fry on both sides until brown. Serve with applesauce and/or sour cream.
