The aroma of this fragrant dish will leave mouths watering. The moist, seared cod is served on a bed of beans flavored with spicy chorizo. A wonderful mix of flavors and textures.

Ingredients

2 strips thick cut bacon, chopped
2 yellow onions, chopped
15-oz. can chopped tomatoes with juice
3 cloves garlic, minced
Bouquet garni
48-oz. canned white cannellini beans, drained and rinsed
Salt and pepper, to taste
5 oz. Spanish chorizo, sliced
2 tbsp. olive oil
8 6-oz. portions of cod
Fresh herbs, red wine vinegar or lemon for garnish, if desired
 

Steps

1. In large pot, brown bacon; set aside. Add onions, sauté until softened. Add tomatoes, garlic, white beans, and bouquet garni; simmer 30 min. Season; stir chorizo slices into beans.

2. Meanwhile, heat olive oil in skillet. Season cod to taste and sear on both sides.

3. To order, place the hot, seared cod atop approx. 1 cup of the bean-chorizo mixture. Garnish with fresh herbs, red wine vinegar or lemon, if desired.
