Pork and Watermelon Kebabs

Skewered foods are a favorite on the grill and offer easy portion control. Instead of threading meat with the usual vegetables, differentiate the kebabs with summer fruits, such as watermelon and pineapple.

Skewered foods are a favorite on the grill and offer easy portion control. Instead of threading meat with the usual vegetables, differentiate the kebabs with summer fruits, such as watermelon and pineapple. 

Ingredients

6 tbsp. brown sugar
6 tbsp. soy sauce
6 tbsp. diced red onion
3 cloves garlic, minced
3 tbsp. lemon juice
1 tbsp. olive oil
1/4 tsp. ground thyme
Pepper, to taste
1 lb. bone-in pork chop, cut into 1-in. cubes (approximately 38 to 40 pieces)
32 1-in. watermelon cubes
16 to 24 1/2-in. zucchini rounds
16 1-in. pineapple chunks, fresh or canned
24 1-in. yellow and/or orange peppers (3 to 4 peppers total)
Nonstick cooking spray, as needed
Sesame seeds, for garnish

Steps

1. Combine sugar, soy sauce, onion, garlic, lemon juice, olive oil, thyme and pepper in a mixing bowl. Pour into zip-close bag and add pork pieces. Seal bag, mix thoroughly and refrigerate for at least 1 hour, turning bag on occasion.

2. Remove pork from bag and reserve marinade. Thread 5 pork pieces, 4 watermelon cubes, 2 to 3 zucchini rounds, 2 pineapple chunks and 3 peppers on each of 8 skewers, alternating the order.

3. Prepare grill. Spray cooking surface and place kebobs on grill. Grill for 12 to 15 minutes, depending on grill heat, or until done, turning and basting frequently with reserved marinade.

4. Garnish with sesame seeds.
