Turkey meatballs are baked instead of fried to make them lower in fat. Your guests will love them as a cocktail nibble with a side of barbecue sauce.

Ingredients

8 oz. pitted prunes
6 tbsp. hot water
1 lb. ground turkey
3 tbsp. grated parmesan cheese
1⁄2 tsp. granulated garlic
1 tsp. salt
1 tbsp. Italian herb seasoning
1⁄2 tsp. pepper
1 large egg
2⁄3 cup bread crumbs
 

Steps

  1. In the bowl of a food processor, combine prunes and hot water. Pulse on and off until prunes are finely chopped and forms a puree. Reserve.

  2. In a large bowl, mix 2 tsp. plum puree with remaining ingredients until thoroughly combined. Form into 1-oz. meatballs and place on an oiled sheet pan. Bake in a hot oven 18-22 min. until cooked through.
