Pineapple serves as the base for this cooling sweet-and-sour combination. Fresh, housemade agave mix adds sweet complexity while a dash of cinnamon adds another layer of flavor. Finished with bubbly ginger ale and pineapple leaf, this tropical drink provides a tiki experience without the alcohol.

Ingredients

2 oz. fresh agave sour mix (recipe below)
1 oz. pineapple purée
Dash ground cinnamon
Ginger ale
Pineapple chunk or leaf, optional

Steps

  1. Prepare agave sour mix.

  2. Combine pineapple purée, agave sour mix and cinnamon in shaker with ice.  Cover; shake vigorously. 

  3. Strain into 14-oz. glass filled with ice.  Top off with ginger ale.  Garnish with pineapple chunk or pineapple leaf, if desired. 

Fresh Agave Sour Mix 
Yield: 4 1/2 cups

1 1/2 cups agave nectar
1 cup fresh lemon juice
1 cup fresh lime juice
1 cup water

1. Combine agave nectar, lemon juice, lime juice and water in a half-gallon container. Stir until well blended. 
2. Cover; refrigerate until ready to use.
