The picadillo is sweet, savory and enticingly seasoned. A great filling for tacos or burritos, this delicious meat mixture also stands well on its own served with rice and a vegetable.

Ingredients

8 lb. ground beef
4 lb. onions, chopped
1⁄2 cup sugar
3 tbsp. salt
2 1⁄2 tbsp. ground cinnamon
2 1⁄2 tbsp. ground cumin
2 qt. canned crushedtomatoes with liquid
3 qt. diced Pacific Northwest Canned Pears, divided
1 1⁄2 cups vinegar
 

Steps

1. Brown beef until it begins to release fat.

2. Stir in onion. Cook until onion is soft, about 10 min.; drain off excess fat. Stir in
sugar, and seasonings; cook stirring 1 min.

3. Stir in tomatoes, pears, and vinegar. Simmer until liquid evaporates, about 15 min.

4. Use picadillo to fill tacos, tostadas, or burritos, or serve with rice and a vegetable.
