A delightfully delicate dish of tender peas, brightened with the flavors of lemon zest and mint. Refreshing and delicious.

Ingredients

6 cups English peas, hulled
2 tbsp. olive oil
2 tsp. lemon zest
2 tbsp. butter
2 stalks spring garlic, thinly sliced (or scallions)
2 tbsp. fresh mint, chopped
Salt and pepper
 

Steps

1. In a large sauté pan, combine peas, oil, and zest with 4 tbsp. water. Place over high heat for 4-5 min. until peas are tender and water is nearly gone. Add butter, melt and remove from heat.

2. Toss in garlic and mint and season to taste with salt and pepper.
