Ingredients

Fruit Filling:
2 1⁄2 lb. ripe pears, peeled, cored, and sliced
1 lb. frozen sweet cherries, thawed, drained
3⁄4 cup sugar
3 tbsp. cornstarch
1⁄4 tsp. cinnamon
2 tbsp. butter, diced

Biscuit Topping:
1 1⁄2 cups flour
6 tbsp. sugar
1 1⁄2 tsp. baking powder
1⁄2 tsp. baking soda
1⁄2 tsp. salt
6 tbsp. chilled butter, diced
1⁄2 cup buttermilk
Melted butter

Steps

  1. Combine all Fruit Filling ingredients except butter. Mix well and divide in eight 8-oz. ramekins; dot with butter. Bake in 425°F oven 18 min.

  2. For Topping, combine flour, sugar, baking powder, soda, and salt. Blend in chilled butter until mixture resembles coarse meal. Add buttermilk to form dough.

  3. Mound dough over filling and brush with melted butter; sprinkle with sugar and cinnamon. Bake 10 min., until golden.
