Ingredients

10 Maple Cedar Salmon portions
5 cooked sweet potatoes
3 cooked yukon gold potatoes
1/4 tsp. allspice, ground
1/2 tsp. cinnamon, ground
2 tbsp. butter
5 medium zucchini, sliced
5 medium yellow squash, sliced
1/2 oz. olive oil
1 tsp. fresh rosemary, chopped
salt and pepper to taste

Steps

Prepare salmon as directed. Place sweet potatoes, yukon gold potatoes, allspice, cinnamon and salt and butter in a stand mixer bowl and whip for 2 minutes or until all ingredients are well incorporated. In a large mixing bowl toss zucchini, yellow squash, rosemary, salt, pepper and olive oil until well incorporated. Pour onto a sheet pan and place under broiler for 6 to 8 minutes or until cooked and blistered. Divide sides over ten dinner plates and place one salmon portion atop.
