Cornmeal breaded oysters make a mouth-watering filling for this poor boy sandwich. Spinach and a spicy mayonnaise spread finish the sandwich.

Ingredients

2 eggs
1⁄2 cup milk
3 cups yellow cornmeal
2 tsp. salt
1⁄2 tsp. ground black pepper
1 qt. shucked oysters
6 cups cooking oil
1 cup mayonnaise
1 tbsp. chopped, seeded jalapeños
1 tsp. lemon juice
4 top-split hot dog buns, toasted
Fresh spinach leaves
Shaved Parmesan cheese

Steps

  1. Whisk together eggs and milk in a shallow bowl. Combine cornmeal, salt, and pepper in another bowl. In batches, dip oysters in egg mixture, then in cornmeal mixture, coating both sides.

  2. Deep-fry coated oysters 1-2 min., until golden and cooked through. Drain and keep warm.

  3. Combine mayonnaise, jalapeños, and lemon juice in small bowl; spread on toasted buns. For service, fill buns with fried oysters and spinach leaves; top with Parmesan cheese.
