This healthy fish entree combines citrus and spices for a unique burst of flavor.

Ingredients

6 6 oz. ahi tuna filets
3/4 cup orange juniper spice

Orange Juniper Spice
Yield: ¾ cup

1 1/4 tbsp. Juniper Berries
2 tbsp.  Granulated Orange Peel
2 tbsp.  Sucanat
2 tbsp.  Ground Coriander
1 1/2 tbsp. Granulated Lemon Peel
1 1/2 tbsp. Ground Turmeric
2 tsp.  Ground Cumin
1 tsp.  Ground Allspice
1 tsp.  Granulated Garlic
1 1/2 tsp. Granulated Onion
1 tsp.  Ground Mustard Seed
 

Steps

  1. Gently heat Juniper Berries over medium heat in non-stick pan until aromatic.

  2. Remove from heat and cool to room temperature.

  3. Grind Juniper Berries in spice grinder or with mortar and pestle.

  4. Combine all spice ingredients and mix with whisk.

  5. 30 minutes prior to cooking, coat tuna with spice.

  6. Sear tuna over medium heat until desired doneness.

  7. Slice tuna in half for each 3 ounce portion.
